Strawberry Lemonade Poke Cake

Strawberry Lemonade Poke Cake.


Earlier i decided to go online and look for a recipe to try. I stumbled upon this interesting cake and being a curious baker decided to challenge myself to bake it. I have never heard of a poke cake but it tastes delicious .If you love lemonade then most likely you will love this cake. I enjoy challenging myself to bake new things , I may not be the best baker but that never stops me from trying new things. Do you enjoy baking?
Ingredients:
Cake
  • Lemon cake Mix
  • Lemon Curd
  • 3 eggs
  • 1/2 cup Cooking Oil
  • Water
  • Whipped Cream frosting
Jell-o Mix

  • Strawberry Jell-o mix
  • 1 cup hot water
  • 1/2 cup cold water

Step 1:

Be sure to have all your ingredients before you begin. I prefer using a whisk as opposed to an electric mixer.



Step 2 :

Beat in your eggs, cake mix and cooking oil till its soft . Add water as you continue whisking it till its soft. I personally use one direction to whisk. Once thats done place the mixture in a 9 inch baking pan . Place it in a pre-heated oven 350 degrees for 40 mins.



Step 3 :

While the cake is in the oven prepare the Jell-o mix. Mix the pack of jell-o with 1 cup of hot water until its fully dissolved. Add the 1/2 cup cold water then place it aside .

TIP: Make the jell-o mix 5 mins before the cake is done.




Step 4 :
  To ensure the cake is fully done use a toothpick to poke the middle if its clean the cake is done. Remove the cake and using a fork poke holes all around it making sure you do not poke it all the way to the bottom, half way is enough because you want it to be layered nicely.



Step 5 :
 Get your Jell-o mix and pour around the cake focusing on the middle part. Once you are done using a butter knife spread some lemon curd all around the cake then put the cake in the refrigerator for 3 hours to let the jell-o set.




Finally :

After three hours the cake should be done and using the whipped frosting frost the cake and garnish it with either lemons or strawberries if you want, I used lemons.  Here's my final result of the strawberry lemonade poke cake :).

I was happy that it came out so good and the best part is that it tasted even better . Try it :)
